CO010           FM 503.1        COOKING - Non Combustible Container       10

     The plastic grease container, in the kitchen, and should be replaced

     with one of a non-combustible material, with any lid, to reduce the

     risk of fire.

 

CO020           F-102           COOKING - Clean Exhaust Hood              30

     The grease filters of the exhaust hood should be removed and

     cleaned daily to minimize grease buildup, thereby reducing the

     fire hazard.

 

CO030           F-103           COOKING - Fire Extinguishers              30

     A UL listed, automatic fire extinguishing system, complete with

     automatic fuel shut-off valve, should be installed to adequately

     protect all cooking surfaces, filters, hood and duct work.

 

CO040           F-104           COOKING - Prep Table                      30

     The wooden preparation table should be removed from in front of

     the cooking units, to a minimum of 48" to provide an adequate

     clearance to combustibles.

 

CO050           F-105           COOKING - Clean Area                      30

     The floors, walls, and ceilings should be given a thorough

     cleansing to eliminate the buildup of grease. A continuing

     program of cleaning grease from the kitchen should be instituted

     to reduce the fire hazard.
