As for 'stable' version, I'm not sure we have a solid definition of that yet. Sites that I work with directly are using 7.0.1760.0 or higher, but I don't have any direct feedback from anyone running -el9, so my advice is to set it up in-house before you install it a customer. If you run into a problem, we will address it right away.
